Almost all restaurants have central kitchens.. very few speciality chefs are needed now.. local restaurants are not surviving anymore due to high costs and everyone is eating at franchise restaurants and fast food 

if you notice, only old people or rich ppl go to fancy dine in restaurants mostly.. 

near my place, they closed down on the border, chilis and another local restaurant.. fast food restaurants, Indian restaurants are crazy busy with youngsters, students and young families.. Olive Garden, ihop etc are occasionally busy but mostly empty..
