Italian kaadu. French cooking lo anukunta. I don't think Italians mix food and alcohol.

anna...cooking lo alcohol vesedi taagi toogadaniki kaadu, alcohol evaporates at about 75C leaving behind the flavor. You're not getting drunk eating vodka sauce or anything with wine lol

vodka which is flavorless  is used for that and for easy scooping as well
