I’m not sure about Latin/South American women, but I do know about Eastern European women from countries like Romania, Lithuania, and Slovakia. Some of my friends married women from these countries while living in Europe, and almost all of them have stayed and adapted well to Indian family life. I’m not sure if South American women are the same, but I believe they would likely stay as well, considering the softer nature of Indian husbands and the stability provided by high-paying IT jobs. @Sucker bro can provide more info.
