in the above 2 countries are danish were not strict about flight tickets but they are strict about hotel booking. 
in my exp danish folks are pretty chill about the tickets but this was a while ago, they even moved dates too than original application. 
 

Heard france and spain are chill too.

Correct depending on which country consulate you apply. Most of them give 3 months except some afoot countries like France and Italy consulates only give about dates. But the key is in your travel you put multiple countries so you would recive 3 months

I travelled with someone who needed a Schengen visa 2 years ago. She got 3 months visa even though our trip was only for 2 weeks. This is for France.
