Generally they don't eat. Those castes that do Upanayamam/Jandhyam don't indulge in meat eating activity. Only exception are Kshtriyas and Rajulu in Andhra. 

Eating something is a personal choice.

Eating something is a personal choice irrespective of caste, religion, nationality.

But most of them already shifted to non-veg with majority eating egg. So they are not anymore noble vysyas.

Arya stems from Aryan. Vysyas is their sect. It means they have aryan roots and they are vysyas by caste. 
 

Technically Arya vysyas is a sub category of vysyas. But the delineation is weakening more these days

Arya in Sanskrit and Sankritized Telugu means "NOBLE". It doesn't mean they have Aryan roots. 

A lot of exercise happened to get mainstream Hindu rituals adopted to varying degrees by Brahmins particularly Vaidikis. It's called "Sankritization".

They're not sub category of Vysyas.  They're more related to Kalingas and Gavaras and were into trading, just like Balijas. They adopted the rituals from Vaidikis and started calling themselves Arya Vysyas.
