When travelers think of the wonders of Mexico they usually call to mind towering Aztec and Mayan pyramids or golden strands of palm-shaded beach. Those are fabulous, but the world’s 10th-most-popular travel destination holds many other wonders that make its appeal much more diverse. We’ve selected seven, ranging from gustatory — the marvelous cuisine — to historic. Mexico’s daily food has been declared a World Heritage cultural treasure, its music echoes gaily up and down almost every street and its people greet visitors with unflagging friendship. That’s not to say the famous pyramids (such as Uxmal’s Pyramid of the Magician) are unimportant. But there’s so much more.

The food of Mexico is both famous and misunderstood. No, it’s not all about tomatoes and chile peppers — and pseudo-Mexican dishes, such as fajitas, are actually American. The foundation of Mexican cuisine is corn; Mexican women have been making corn tortillas by hand, using locally grown white, yellow, red and blue-corn masa, every morning for more than a millennium, and that long tradition is what UNESCO cited in its World Heritage designation.

While its beaches most often appear on travel posters, Mexico’s mountains actually define the country, a large portion of which lies above 3,280 feet. The Valley of Mexico, a balmy vale ringed by volcanoes, now holds the Mexico City metropolis, the Western Hemisphere’s largest urban area. Major ranges mark both east (Sierra Madre Oriental), west (Sierra Madre Occidental) and south (Sierra Madre del Sur).

Visit the beautiful village of Patzcuaro, between Guadalajara and Mexico City, and a native Purépechan will proudly tell you that not only were they never conquered by the Spanish, they never submitted to the Aztecs, either. Mexico’s people include more than 50 indigenous groups, and while most aboriginal cultures in Canada and the United States were practically erased by European settlers, in Mexico they were absorbed. Virtually all modern Mexican citizens have indigenous blood, and are proud of the fact. Mesoamerican wide cheekbones are among the reasons the Mexican smile of greeting is so broad; the famous Ballet Folklórico de Mexico preserves many traditional dances.

Sparkling lakes, aromatic pine forests and colonial towns clasped in pretty valleys such as Guanajuato and Cuernavaca pepper the highlands. In the south, coffee plantations vie with tropical rainforests. In the north, the famous Copper Canyon offers one of the world’s most thrilling train rides, trundling along steep chasms that in places surpass the Grand Canyon.

Aztecs and Mayans, Moctezuma and Hernan Cortez — larger-than-life people and cultures dominate the story of Mexico’s past. The country’s history is fabulously colorful and complex, and most scholars identify at least a dozen distinct pre-Columbian civilizations that rose and fell in what’s now Mexico. It has held by or been part of empires that range from the Olmec (1500 BC) to the Bourbon (briefly, in 1821). Mexico’s silver propped up Spain’s economy for three centuries; descendants of the last Aztec emperor, Cuauhtemoc, assimilated into Spanish nobility. There have been several revolutions, innumerable revolts and plenty of republics, dictatorships, monarchies and more. A 500-page history of Mexico is just a sketch — and archeologists continue to uncover more. The whole vivid cavalcade is on display at Mexico City’s famous Museum of Anthropology and nearby Museum of History in Chapultepec Castle.
