When gold is spoken of in terms of Karats it means the percentage of gold in the alloy which the jewellery is crafted from. 18ct gold is actually 75% gold with the remaining 25% being other materials which strengthen and sometimes give the alloy a different colour to the golds natural yellow.
White gold is normally a much paler yellow alloy which is plated with another white metal called Rhodium, the jewellery is plated to ensure a bright white finish with a high lustre. Over time the plating can wear through to reveal the yellowish alloy underneath, it’s a relatively inexpensive and quick job to have any items re-plated.

It varies, but 14k and 10k white gold are common. You can find 18k too. If it’s less than 10k, it can’t be labeled as gold.
