abhigadu Posted November 4, 2014 Report Posted November 4, 2014 Method : DUM BIRYANI Prep Work - Soak the Rice for at least 30Min A) Chicken Marination - Take a Big Bowl , Add Chicken, Thin Sliced Onions, Pacchimirchi, Curd, Alla velluli paste, Pachi Garam Masala ( bay leaves, cloves, yalakulu, cinamon, miryalu ), put some biryani masala paste { like parampara u get it any desi stores }, karam, uppu, Pudhina, kothimeera, olive oil, sajeera if you have some. ---> Mix this well and keep it aside. B) Rice Preperation - Take a Big Bowl - add much more than required water for cooking the rice, add all pachi garam masala as above mentioned, pudhina, pachimirchi cut chesinavi, baga puvu if you have some, SOMPU, sajeera and wait until it gets boiling stage now don't forget to add SALT and OLIVE OIL - then drain the water from soaked rice and add to it .. let it cook for 10-15 minutes .. make sure you are turning it frequently .. 50-60% should get cooked - now FILTER the rice using a JAALI so that all the masala and flavors remain with the rice ... now just put a glass of cold water on top of it. C) Actual DUM part: Better take a BIG Base vessel - Add butter or Ghee or OLIVE OIl as needed and touch up all bottom - now add the marinated chicken and rice in layers as needed - I prefer one layer in the bottom but u may add 2 - now put a small glass of MILK sprinkle it equally on top of rice and add some ghee or butter - and if you have opika add some fried onions too, Make sure you have tight lid if not put a silver foil and then lid on top of it... Cook this vessel on high temperature for 5-10 min and just low down the temparture to 4 and keep it for 20-30 minutes .. Perfect DUM Biryani should be ready
