Conversion and charity in her case are inseparable, she is catholic and very religious. And she stated many times that its her religious belief that made her to start mission of charity. The ultimate motive of all 3 Abrahamic religions is to convert as many as possible in their life (Read from Bible and Qur'an). Its the essence of being Christian (and same applies to Muslim)

Because they are worried about more people converting into Christianity from Hinduism. They should actually start missionaries and let these people stay instead of talking these in public. They have already started in the form missionaries like Akshyaya patra, Elakvidyalaya and Saraswathi Sishu Mandirs. Some of them are in association with ISCON and other Hindu groups. They let Chritians and Muslims also study in their institutes. There are some good number of muslim students and they don't ask them to convert. But they make them start their school day with prayers like Sarawathi namasubhyam and etc.

That's main reason. They best way to counter is provide more to the destitute. Your second point is not valid. Because allowing the non-hindus into their institutes make non-hindus closer to hindu culture (it could be religious or philosophical) and easy integration into the majority thus providing the homogenous society akin to Chinese or Japanese society.  They believe that all the Indians that are native to India were Hindus and they have been converted over the time by force, allure or the need. But not everything is green from their side. There are fringe elements in the RSS as well and their sister organizations like VHP and BD
