go with  HTTP 1.1  protocol  

to look at some network statistics use Fiddler  tool.. seems the ask is more than that.. you can research on better way to show output of throughtput 

imnplementing a web server , we had a complete course on it, but you can try online for java webserver implementation code..

wireshark supports most of the protocols, but for HTTP fiddler is the best.. I am fiddler fanboy ;)
