I have some ideas for you:
 
1.       Drive to Breckenridge, CO which is a nice mountain ski town but there is always a lot of activity during the summer.  They have a nice main street with a lot of shops and restaurants.  You can take I-70 from Denver and then if you want to make a loop drive, return to Denver on US Route 285.  It is a nice drive and can all be done in a nice full day trip.  On the way there or back you could also stop in Frisco, CO.
 
2.       Drive to Vail, CO, another nice mountain ski town, but I think that Breckenridge might be better for you for a short visit.
 
3.       Take a ride to the top of Pikes Peak on the Cog Railway (http://www.cograilway.com/).  Pikes Peak is located near Colorado Springs.  This is nice because you can take the train to the top and enjoy the views and let someone else drive.  You basically take the railroad up then walk around for a half hour and enjoy the views and then come back down.
 
 
 
4.       Drive up to the top of Mt. Evans.  This takes you along one of the highest paved roads in North America and is very close to Denver.  This is similar to #3 but you have to do the driving yourself, so I prefer #3 if you want to make the trip to Colorado Springs.
 
 
 
5.       Take a short drive to Boulder, CO.  This is a college town where the University of Colorado is located.  Many shops and restaurants along Pearl Street which is mostly closed to traffic.  My wife suggested a restaurant called “The Med” (http://www.themedboulder.com/), but there are plenty of options and all kinds of foods.  There are also some hiking opportunities here (for all levels).  It is such a nice place it is possible to skip Denver and just stay at a hotel in Boulder.
 
 
 
6.       In Denver there is the 16th Street Mall, which has shops and restaurants and a free shuttle if you don’t feel like walking.  Also downtown near the 16th Street Mall they have a nice baseball stadium and a lot of places to eat in this section of Denver called “LoDo”, but it is very busy right around the stadium if there is a baseball game going on.
 
 
 
7.       There is a nice museum called the Denver Art Museum which is worth a quick visit if you like Museums, it is a nice new building built in the last 10 years http://www.denverartmuseum.org/.
 
 
 
8.       If you like college towns in addition to the University of Colorado in Boulder there is Colorado State University which is in a town called Fort Collins.  It isn’t too far away, but my opinion is that Boulder is a nicer place to visit if you only can pick one.
 
 
 
9.       Also in Denver they have a decent Zoo but nowhere near as good as what we have in San Diego.  There is a nice botanic gardens however http://www.botanicgardens.org/, which is good for a short visit and walk.
 
 
 
10.   There is a huge national park called Rocky Mountain National Park (http://www.nps.gov/romo/index.htm) and is home to many Elk.  People drive up there just to view the Elk in their natural habitat.  There is a town called Estes Park, CO which is right near the entrance to the park and has hotels, restaurants, etc.  The is a really nice hotel in Estes Park called The Stanley hotel (http://www.stanleyhotel.com/), they say that it was an inspiration for Stephen King the writer of the famous book turned movie called The Shining.
 
 
 
11.   Near Morrison, CO you could visit a place called Red Rocks.  This is a very short drive from Denver and the main attraction is an awesome outdoor concert venue but is also a nice place to visit with great views of downtown if there isn’t a show going on http://www.redrocksonline.com/.  The town of Morrison is also a nice small town with a few restaurants.  There is a locally famous restaurant here called “The Fort” (http://www.thefort.com/) it is kind of fancy and a bit expensive and mainly a place to try different kinds of meats (like Buffalo and Elk).
 
 
12.   Finally there is a longer drive and it is difficult to do in a single day (although I have done it before), from Denver to Aspen, CO.  This trip is best if you start out from Denver, take I-70 to Glenwood Springs, CO, stop and stay there for the night.  Then drive up to Aspen, CO (you could also stay here), over the continental divide and then back to Denver through Leadville, CO.  I think that the continental divide is pretty cool and the towns of Glenwood Springs, Aspen and Leadville are interesting places to visit.
