Guest Khulfi_Raja Posted September 29, 2015 Report Posted September 29, 2015 simple vayya - biryani ki rice most imp - 1) start pre-heating oven for upto 400 for goat n 350 for chicken. 2) already masala mix chesina chicken ni oka aluminium or glass tray (ah tray ni oil thoti spread cheyyi like one or two table spoons) loki teesuko - then chicken ni spread cheyyi (marination apude chicken ki oil mix chestaav) keep the tray ready and begin to work on your rice. 3) soak rice for at least 30 mins in a big VESSEL (mix some spices and put one or two table spoons of oil + salt to taste (idi must)) 4) step 3 lo vessel ni full heat meeda pettu - around 10 mins ki you will see rice will be popping out in the water (at this point keep for another 5 mins for Mutton Biryani - for another 8-10 mins for chicken biryani) 5) once rice aipoindi annappudu ventane teesei stove meeda nundi and drain as much water as possible - immediate ga ah rice step 2 lo tray loki transfer chesi even ga spread cheyyi - use some cashew and spread some ghee here n there n immediately cover the tray with aluminium foil (no need to punch in holes) 6) ready aina tray ni teesi step 1 lo pre heated oven lo pettuko - chicken - 1 hr and goat - 2 hrs aipoyyaka inka eedaki vocchi comment post cheyyi Chicken n goat ki marinate kooda cheppi punyam kattuko

cool_dood Posted September 29, 2015 Report Posted September 29, 2015 Chicken n goat ki marinate kooda cheppi punyam kattuko oka 4 pounds meat ki 1/4th to 1/2 shan biryani masala + cut green chillies + ginger garlic (this will dictate the spice level) + coriander + oka squeezed lemon or lime (lime z good) - oka rice cup lo curd or buttermilk (cultured buttermilk is good) + turmeric + oka 10 cardamom + 10 cloves + 4-6 biryani leaf + shah jeera + salt + oka 4-6 table spoons oil vesi full ga mix cheyyi - after everything mixes up taste it a bit - inka spicy kavalante appudu inkonchem masala add cheyyi (salt ekkuvaithe konchem masala kooda too spicy ga untadi) at least oka 1 hr unte baaguntundi - add more yogurt or buttermilk to get it look like restaurant style - yogurt or bm ekkuvesthe ekkuva sepu bake cheyyali biryani - oka 1 hr ki baitaki open chesi choodu if it still needs to be cooked - leave it there for extra 15 to 20 mins.
