Question, what if your previous employer cancels your I 140 petition or withdraws it after 180 days. Can you still hold on to your priority date in that case?

there is no 180 days rule for 140 bro .... it is for 485 application ... if 485 is pending for more than 180 days , you can change employer not 140 ....

Green card applicants often ask if they are able to change employment while waiting for final approval.  The answer is yes, if you follow established portability rules.  Generally, if your I-485 application has been pending for 180 days or more, you are eligible to change jobs and continue your green card application.  However, portability rules have pitfalls you must avoid, or your green card application can be denied.

You can hold the date. If Uscis finds that there is an issue with the employer or if the 140 file chestapudu info correct ga ledu antey they can not allow you to use that priority date.
