The paystubs you aren't going to show from the old employer. All you are going to do is use the paystubs from your current employer, but use the PD from the previous employer to file for your H1B extension.

Yes thats correct but u can use that 140 approval for H1b extension for only one time I believe. You can't use that for multiple H1B extensions (i.e. until you get EAD)
