Freshly ground masala ok but e masala entha veyali ani telisthene taste vachiddi. Ex: cumin powder takkuva veyali, coriander powder ekkuva veyali , curd fresh and sweet di veyali and lime juice veyqli not lemon  juice. Ala Chala vuntay and rice cooking with masala

yes, and also how marinated the meat is..and wether its chicken or goat...etc stuff as well..

Yes min 6 hrs marinate, but I do overnight most of the times
