There is a toggle in google assistant settings menu which would allow you to not read any messages, emails, calendar etc.

Also what do you mean "google phones"? Do you mean android phone? or Do you mean phones made by google i.e pixel?

Android is all about choices, your privacy/security depends on the choice you make.  You know that you can disable "assistant" on your phone, right?
