Wheat flour in olden days is raw and not too soft (Without much fiber) like we eat now.. chapathis used to be but hard with that flour Bcoz of fiber.. now no one likes it if it is not hard to eat.. everyone wants fluffy soft rotis so you can eat like 10 of them...

Try chapati with equal portions of wheat flour and Almond or Jowar flour to reduce carbs.

Do cardio when you are in a fasted state. That's the only way to combat the damage that carbs do.

Try to fast atleast for 18 hours and workout when you are fasted. Early morning is the best time
