As per today webinar i saw in the youtube, reddy&Neuman guy was telling that apply for AOS and keep EAD in pocket. Do not even reveal it, continue using H1-b .. If the EB-2 moves faster you can upgrade again.

i would not recommend downgrading  for your date . but if you are desperate to GET EAD then go ahead . 

my reasons :-

1 : by looking at pending numbers and current situation ( spill overs , less demand due to covid ) you have good chance of getting GC in EB2 . EB2 will get all unused GC numbers from eb1 ,eb4,eb5 . but eb3 will not get any from eb2 . so for your PD chance of getting GC in EB2 is higher than EB3

2 :- very high chance of getting EAD in EB2 itself in coming months . 

3 :- if apply in EB3 and used EB3 EAD then your h1 is no longer valid . this will make your life complicated to go back to EB2 in case its final action date is current .

Chances of EB2 moving faster than Eb3 will be visible right after consulates open when EB3 increases heavily

Eb2 will also get Spillover this year from EB1 in the last quarter, which means 2011 DF Dates will comes for sure in October 2021 worst case if not in last quarter

Jan EB3 pass ayye chances near impossible, 2015 kanipivvadame oka surprise with the number of cases, USCIS will know how many applied next months, DF may not be accepted anymore
