I don't make a big deal out of it. He just doesn't eat meat because he always cooks, and he doesn't cook meat since I don't eat meat. When we go out since we share a meal, he doesn't order meat. So, he doesn't eat meat, and I don't think it bothers him all that much, if it did, he is welcome to eat whatever he wants.
