onions and mushrooms make the patty moist and won't be dry. We didn't add cheese while making the patty but my wife is saying shelf life will be less if we add cheese. But we can always add cheese while making the patty or on top of burger.

We actually took patties to the camping trip so had to store for few days and also they were soft as well when I tasted, But I totally agree, cheese can be added if you like, We just didn't prefer.
