I eat variety of grains. Not necessarily one.

BrownRice, oats, quinoa, Ragi flour

brown rice come with all the benefits without the gluten issue from wheat, many people are not even aware of their gluten sensitivity issues until they see health issues already

looks like chapatti has lower GI than brown rice.

but one easily add more curry and add ghee to get the GI down even in case of Brown rice

Don’t .... if made you should eat when hot .... lekunte edustaru.... and avi kuda chinna poori size lo vasthay... oka 10 tinali... each chapathi 1-2 min ... 20 chapathis 30-40 min padtadi.... waste muchata
