They do change with the place, that's what space time does. It warps the particles which changes their behavior. 

Even more than the place, it's the scale at which you notice these differences. Aren't we talking about quantum physics here, i.e, dealing with particles that are extremely tiny compared to macro, real world objects?

what you are talking about is called classical Newtonian mechanics

 

once the scale goes to level of atoms and subatomic particles, the physics we know in general won't hold.

example, classic double slit experiment.
