Enamel can chip overtime .. First few times konchem burn autundi stainless steel lo but once you got used to the time, it will be perfect. But its worth it. Over the last 10 years cycled through various pans/pots, some are too heavy and some too light/thin. Lessons learnt - avoid stainless steel unless from a reputed brand with an alloy metal, stainless steel heats and dissipates heat too quickly causing food burn which is not suitable for slow cooking like biryani, I feel oven pots are too heavy and most common sizes are 6-7 quart which might not be big enough for 8 guests. pick a bigger pot so that there is atleast 1/4th space left when biryani fully cooked, pick a wide pot than a tall one.
