Do you guys cook it enough till The meat is tender and some bones are chewy ? ? Or rubber Lekka lagala meat ni ? 
 

Most of the restaurants and parties I have been always have undercooked mutton . Why ???? 
 

the flavor is in the bones , let them cook for a while mee mohalu manda. 
 

and don’t add tons of masala, mutton natural flavor is extraordinary. Adding too much masala covers it . Do that to chicken .

We do get it once in a while, but I rather enjoy Salmon, CatFish, etc.

Mutton needs to be cooked fully. But I also like it with masalas, and chili powder. Not too much, just enough.

If you eat beef you’ll know why mutton is undercooked. Red meat tastes better undercooked or not well done

I tried beef a couple of times. Did not like. I heard from American friends that its best eaten less cooked when it still has juices. What I ate was well cooked. It was like rubber.

Well done is not preferred for beef as it makes it rubbery, even lamb/goat as well. Manam use chese spices tho mutton well done baane untadi kaani western style lo won’t be good. Mutton chops taste amazing when slightly undercooked

Try brisket at a good bbq place. You’ll love it

Bones chewy kanna mana desi cookjng ki mukka bokka ninchi easy ga split avali anna adi optimally cooked  at leastchalu

yeah, desi style lo meat will be cooked till tender, mutton bones masthu tasty untayi

mutton biryani baguntundi assalu kani only few places do it good

True and he does same with chicken or any other meat. spices ekkuvaina champesthadu.

But Indian cooking is different. we eat well cooked.

Doneness is a concept applied to western dishes not for desi dishes . It’s a preference ,some cultures prefer rare or medium but entire South Asia prefers fully done . 
 

so my kochen was for desi dishes , I tried rare/medium lamb few times at work , for me it was disgusting .personal preference .

yes baa ...

by cooking in a welldone way, the heat kills the bacteria. In south asians where dairy industry standrds and hygeine may not be uo to the mark, helps to kills the bacteria and spores in the meat by heat. TO that cooking well done helps.

Apart from that  lamb or mutton is best cooked by pressure cooker or instapot first, then saute it.
