the flavor is in the bones , let them cook for a while mee mohalu manda. 
 

and don’t add tons of masala, mutton natural flavor is extraordinary. Adding too much masala covers it . Do that to chicken .

Exactly that is how it should be done for desi dish . Many people just serve undercooked and it’s sad .

If you are young in 20's then don't overcook it. if you are over 30's or 35's  cook it tender.

there are many muslim dishes where mutton is prepared not well done

Also, you don't have to fully cook at regular temp to taste better as you like it, slow cooking at low temps for long yields the best results and meat falls of the bone. Mana cooking lo mostly mudirina mutton untadi and it has to be cooked to death

you're worng. read what temps kill bacteria for different kinds of meat

red meat can be cooked to low temps to kill bacteria/parasites

chicken/pork has to be fully cooked or else M gudisi potham

Meat tenderiser like papaya past tho oka 24 hrs ala mainade chesi , pressure cook cheyakunda direct dum chesta with rice oka 1 hr ala

results were sub par

ade pressure cook chesthe too much gravy for dum cooking later , ela proceed avvalo ardam kavadam ledu , looking for inputs

desi cooking ki marinade it well for 4+ hours and roast it first until you see the oil separating, then put in a cooker and it always comes out good

totally agree with slow cooking.. not practically not possible everytime to do slow cooking
