Biryani in restaurants sucks sometimes, i heard they cook once or twice a week and refrigerate

I am shocked to know this? Anybody worked in restaurant? How often they cook biryani in a week? do they refrigerate?

if you are eating biryani on Sunday late night or Monday...at restaurant...you are getting the stale food.

served microwaved.

Curries are made, packed in plastic bags, frozen once few days.. they take out from the fridge and heat it every day.. 

same with biryanis.. they use frozen masala made with chicken/mutton/veggies and use it to cook biryani with rice… 

you are basically eating frozen food when you eat at any franchise restaurant…

no anna... curried meat or veggies cannot be refridgirated.... more than 3-4 days..

if someone is doing that....then FDA ki inform cheyali.... it doesnt allow that.

anduke restaurants mix and marinate meat on Friday afternoon to bypass the loophole of 3-4 days.

Friday evening nunchi Sunday afternoon varaku Konchem fresh ga vuntundhi biryani. Migatha rojulu nammalem.

6 years back heard from a guy working at West parmer lane Biryani pot in Austin that Biryani is cooked fresh on Friday and same is used all week long

Are you 21 ? That’s how real world works . Unless it’s very fast busy restaurant or food joint .

Yeah.. I didn’t say they freeze it for weeks… but they cook it at a central location, pack and freeze every few days… they don’t cook everyday… dum biryani ki rice madhyalo aa frozen masala and curry vesi cook chesthaaru.. 

better eat dosas or chaat items at restaurants.. they are usually fresh..

We used to have restaurant but sold after Covid after getting loan 

all curries cooked alternate weekend and freezes 

biryani made only on Fridays 

other days serve biryani made on Friday or add chicken curry to bagara rice and serve and most north people like this way so depends on customers we serve

except at busy restaurants, they all charge full amount for substandard, stale food. Greedy Indian restaurants that charge exorbitantly.

Always go to a restaurant that has a good flow of people. They make biryanis every day. A good measure is sometimes in evenings, biryani will be over by 9-9.30 as they only make once a day and limited Qty. 

For curries, meat is marinated and curry base are also pre-made. A good restaurant knows how much to manage this but a lot of times this food overflows to next day. Nothing wrong in it. As long as its 1 day. 

Once food is made, it should never be refrigerated in a restaurant. Some might do and add it to buffet's. That's y I never eat buffets.

yes in our restaurant we cook in bathroom

for cutting meat and vegetables we use an axe
