If you are fashion about cooking and good at speaking with smile even they curs, have some savings and also someone there to support from family? Jump to find a better place. Timing is very important. There is always a competitor, it could be your friend.  
it’s all depend on how the food tastes. Our people trust mouth talk, something goes wrong it’s a mess. If you doing IT and eveng support mestri to help punugullu and bajji selling? forget about it.

Looks like a new Food truck can be bought for 60-65k. 

What other expenses are involved? One time and recurring. Do you have to pay anything for the place where you station this? Any approvals needed for the location?

Weekends if they are run good then you make 2-3K per night

I believe in thinking differently and staying ahead of times and less dependency on humans. 

Probably I will invest in the idea of robotic Dosa stalls, desi chai, mango lassi, and samosa, etc as menu items  .. very much like the robotic coffee/tea stalls in malls these days.

you have get approval from HOA of that community to park truck and sell food. typically we see food trucks for desi festivals.
