You have milk based processed products such as Cheese (including paneer), butter, yoghurt, ghee, lactose and whey which are again run by processed shops. Also, the consumption has preferences. American milk is bovine (cow originated). India has about half of the milk coming from buffaloes. Then our MF% vary as well, so does taste. US dairy businesses are more interested in processed dairy, not dumping millions of gallons of milk. Ultimately, consumers will get to choose. Quote
