We used to use palm oil, peanut oil 1 generation back. We moved to sunflower and other refined oils with marketing gimmicks. Now it’s determined that peanut/palm oil are good. Same with sanna biyyam vs brown/dampudu biyyam. Similarly, we used to use aluminum/hindalium. Then came non-stick. Now they say non-stick is dangerous esp when the layer comes off. In US - some people use cast iron. My dad is a chemistry major and worked for a defense company handling their Lab - QC. He told it’s basically poison and cast iron is not good. Coming back to the issue, I don’t think many people use aluminum or utensils from Indian stores. Most ppl use non stick and aluminum/steel based rice cookers or hot pots. it does not matter that they ban these. As for us, we only use steel based rice cookers/insta pots. We do have an aluminum based cooker which we use occasionally. Non-stick pans we replace every 3-6 months. I know it sounds crazy but we do. 1 Quote
