He knows that a spicy chicken chettinad goes well with paper dosa and a plate of crispy medhu vada is complete only when accompanied by peanut and coconut chutney. It's been four years since Chef Alun Sperring along with his wife Dawn started an Indian restaurant The Chilli Pickle in Brighton in UK and it has become one of the most popular Indian restaurants in UK. The chef along with his wife and son, was in the city to explore the famous Hyderabadi biryaniand haleem. “My grandfather was in the Merchant Navy and he used to share stories of his travels. It is due to my wanderlust that I decided to be a chef,” says Alun. After travelling and working in different countries and kitchens, he decided to open his own restaurant in Brighton. But it was a strange choice for an Englishman to open an authentic Indian restaurant. “We toyed with different ideas but kept going back to Indian cuisine. When you own a restaurant you really have to be passionate about what you serve and we love Indian cuisine,” explains Dawn who helps him manage the business. http://www.thehindu.com/life-and-style/Food/article3445809.ece
