You lose your non-immigration H1B status. If for any reason your 485 is denied then you will be out of status immediately. Maintaining the H1B status gives you the flexibility to continue to maintain your legal status.

You can apply for EAD but don’t use it unless it is absolutely necessary. Better to maintain H1 status.
