Your medicals is valid for one year.. if your application exceeds one year.. they will ask for re-medicals.. once you get COPR you land before your medicals expire.. once you land, you have 3 yrs to decide what to do.. if you want to keep your PR active, you have to physically live in Canada for 2 yrs

I hold bachelors and masters degree in mechanical engineering, but has experience in IT industry. Does it create a problem ? Education and work experience should be in same stream ?

Yes both should take exam , Adhi advantage kuda who ever scores more can be a primary applicant . Secondary applicant score doesn’t matter much.
