Generally weekend better, because full hulchul and lively untadhi vegas, but pandemic kabatti weekday ne better, rush thakkuva untadhi.

It depends how many days you got, if its very fist time, 2 nights in vegas is minimum.

West rim - you can do a day trip but it will take one full day. Generally it will be tiring so don't expect to enjoy until late night after returning to Vegas, There are day trips in a bus to west rim grand canyon where they pick from hotel, also not expensive. We can just relax in the bus and they take you to the west rim and bring back by evening. We can escape driving and feel less tired that way.

I have no idea of death valley.
