Ead should be good for companies.

For small companies they might not know what that is, just tell you are visa independent.

H1b comes under visa sponsoring, but not EAD. As long as companies are willing to sign 485j, no issues.

Never. Technically, there is nothing like change of status to gcead. U r on h1b status as long as u enter the country on h1b. When dmv checks for ur status, these status shows up in the order of precedence.

1. GC/l-551

2. ead/i-766

3. Other non-immigrant statuses like h1/L1 etc.

Only one type of status is visible to dmv's. If u present both h1b and ead, thy go by ead blindly.
